Autumn Mantle Ideas

I hope you all had a fabulous weekend! I can't believe how quickly it flew by - two days in the middle of the workweek crawl along at a snail's pace yet two days on a weekend fly by like a bullet! It's not really fair, is it?

Fall is truly hitting the mountain top, with temps in the 30's last night - brrrrrr!!! Cold! 
The flannel sheets are on the bed, and I had a cozy fire going this morning to take the chill out of the air. 

I love fall!!

I started bringing in some fall accessories and candles to decorate the house. I was outvoted on the pumpkins, apparently it was "too early" - however now that we've hit temps in the 30's it's definitely time!


I kept it pretty simple on the mantle for now as I don't really have that many fall decorations as of yet. But I love looking at the beautiful mantle displays some of you incredible bloggers put together and I'm gathering ideas to add to the foundation I have in place already. Check out these beauties - I'm in awe!

End of Summer Garden Update

Happy Weekend, Friends! I hope you all had a glorious week and have some fun plans for the weekend! 

Time is flying by and before you know it the garden blooms will be gone...but for now we still have some beautiful things happening all around us. 


The begonias have had their best year ever! They are so happy down on the lower deck and they just put out non-stop blooms. I will bring them in for the winter once more and they should continue to bloom in the house, which will be so lovely to enjoy in the winter months. 


The Zinnias are still shining bright in the late season garden. 


As are the cosmos. They like to be continuously deadheaded, which I'm a little behind on at the moment, but so far they aren't too mad at me!


The gorgeous Casablanca Lilies are nearly done, but this new bloom just opened this week. I look forward to many years of beauty from the bulbs I put in this spring, and they should continue to multiply to create an even more amazing display each year. 


The Cleome is still going strong and the bees love it! This little guy was buzzing happily through the garden while I was taking photos and he didn't mind me one bit!


I never know what color Cleome is going to pop up but it doesn't really matter because I love them all. 


The Autumn Joy Sedum is coming into bloom while the Monarda (Bee Balm) fizzles out. I had a great season with the Monarda, it bloomed for about 3 months so I really can't complain!


The Nasturtiums in the veggie garden are so much happier than the ones on the deck. I'm really not sure why as they were from the same seed packet, and they both got plenty of sun and good soil. The ones on the deck are truly pathetic, while the ones in the veggie garden have spilled out onto the garden paths and have taken over!


The Morning Glories in the veggie garden are still going strong, popping up here and there. The blooms are the size of a saucer from this variety, while the self sown ones from last season are about a third the size, but a vibrant purple. 


I found this butternut squash blossom hiding under some leaves...but I'm pretty sure it's too late in the season for anything to come of it. Too bad. 


The tomatoes are still rocking the veggie garden - there are HUNDREDS yet to ripen - and I have lots of plans for filling my freezer with amazing things created with all these yummy tomatoes! Not a single tomato will go to waste if I have my way!


The carrots are nearly ready to pick - they are showing their shoulders above the soil so I'll start bringing them in soon. Hopefully by removing some of the larger ones that will give the smaller ones room to continue to grow. 


Same with the onions. I'm leaving them in the garden as long as possible to keep growing...I hope my plan works. Hey, I'm still new at this whole farmer thing!


The herb garden is OUT. OF. CONTROL! Insane. I see some herb butter in my future. Lots. 


The zucchini is still trying but I have yet to actually get even ONE zucchini out of my garden this year. Weird. Everyone else is trying to give them away!  Which actually works for me....thanks, guys!


And the grasses. Oh, my! They are truly my garden love this year. Next year I will put some in the large planters on the deck so I can enjoy them up close. I love the way the breezes move them, and the sun shines through them. Just gorgeous. 


The Dahlias are still doing amazing. 


They are like little drops of sunshine in the garden. 


This little guy was enjoying the sunshine on a geranium leaf. As long as he stays outside...


The geraniums are hanging in there although not blooming as profusely as in the warmer months. But I'll take every bloom I can get for as long as I can get them!

Sunshine....Makes Me Happy

I was always a HUGE John Denver fan. Oh, I think I've mentioned that before!! It's actually where the name of my blog came from....via my daughter.

But he had it right, didn't he? Sunshine on my shoulders makes me happy. Really happy.

One of the things that I absolutely fell in love with when I first toured my new home was the sunlight streaming in the windows. It was a very cold day in early November when I first came to see the house yet the sun was shining so brightly through the windows making the whole place so warm and welcoming.


This morning the sun was beaming down on the deck causing steam to rise from the heavy dew that had settled on everything overnight. It was a glorious sight.


The sun shone down on my garden cottage, seen through my bedroom window as I was making the bed.


The front windows get the most sun in the mornings...the new windows will be installed next week which will be great for energy efficiency but unfortunately I'm losing a few inches of sunshine on either side.


Just look at the way the sun streams across the room. How can that not make a person happy in the mornings?


I'm not the only one who cherishes the morning sunshine!

The dining room table is starting to get decked out for fall....the warm glow and the pop of orange really brings a cozy energy to the room, perfect for this transitional season.


My newest happy place. I love sitting here in the mornings with a cup of coffee for a little quiet time before the day starts.


The lower level gets great sunshine also, which is a huge plus! This plant is so very happy on this windowsill...I don't have the heart to move it to let in even more light!

When Life Gives You Tomatoes....

Good Morning, Friends! I hope you are all enjoying these cooler days....we got down in the mid 40's on the mountain top these past two nights - brrrrrrr!! Those kind of early fall nights just make me want to curl up by a crackling fire with a blanket and a good book.  How about you? What's your idea of a perfect autumn evening?

Autumn also makes me think of warm, comforting foods. It's no secret that I love to cook - I think it's in my blood! I remember voluntarily signing up for a cooking class at my elementary school when I was a small child and I absolutely loved it. The cooking bug must have bit me hard way back then and has definitely stuck with me through the years. 

At this time of year I'm facing a mound of produce from the garden that's ripening all at once. It can be somewhat overwhelming at times, since I do work full time and don't always have time to deal with it right then and there. 

That's what weekends are for! I'll often spend a Sunday having what I call a "cooking marathon" where I'll produce some recipe en masse to be stored in the freezer for the months ahead. 

This weekend it was Roasted Tomato Soup. 

Why? 

Because of this.

To give you an idea of how big the pile really is....


And this is actually only the pile that is very ripe and needs to be used immediately! There's a whole other pile that is making it's way into other recipes this week.

So, what's a girl to do? I don't really can tomatoes, especially these small ones. However, I did just recently pick up a copy of a wonderful cookbook -  The Sprouted Kitchen - A Tastier Take on Whole Foods - and while browsing through it I found a recipe for a Roasted Tomato Soup.

Bingo!

Of course, I can never leave well enough alone so I did a little google search for a similar recipe and found this version which is the one I ended up going with, for the most part. Minus the parmesan wafers, since it was destined for the freezer.  And I'm pretty sure I had more than 4 lbs of tomatoes here so I just increased all the ingredients as I went along.

Easy Peasy, right?


So, I started with a bucket load of tomatoes and some large cloves of garlic (skin on), drizzled with olive oil and sprinkled with freshly ground sea salt and pepper. Popped them into the oven to roast according to the recipe directions.....only to find out my oven wouldn't go over 100 degrees. I guess it was on strike after me not using it all summer long?

So I put the broiler on low and roasted them that way. It worked fine.

And I have an appointment this weekend to find out what the heck is wrong with my oven.

But I digress.....


Look at those gorgeous roasted garlic cloves - oh, my!

I did tell you about my obsession with garlic, right?

And how I drove about an hour to the closest still-open farm stand in our area right before Christmas last year to pick up $50 dollars of organic garlic to last me through the winter?

It worked. I still have some, which I'll be planting shortly. But the garlic I used for this is the garlic we pulled out of our garden a couple of weeks back. It's amaaaaaazzzzziiinggggggg!!

Like, BIG TIME love.


Can you see the beauty of these awesome roasted tomatoes? This probably took about an hour on low broil. Same as it would have if my oven had been cooperative. Roasting tomatoes intensifies the sweetness and brings out a whole other dimension of flavor.


Next step was to let the tomatoes and garlic cool while I sauteed chopped onion with a little butter, a teaspoon of raw sugar, and about a teaspoon of dried oregano. Sauteed until soft and starting to turn golden.


Next came the chicken broth. I used low sodium, fat free broth that  I had in the pantry. It's a staple in my house. Dump the tomatoes back in (along with all the drippings in the roasting pan) and the peeled (whole) garlic cloves and simmer for about 20 minutes.

Out comes the immersion blender (a MUST for anyone who likes to make soup! No, really!!  Run out and buy one NOW!!)


And here's the finished product - gorgeous! The recipe called for putting it through a fine sieve but I didn't see the need. It's beautiful just the way it is. I also did not add any cream. I can always add a tiny bit at serving if I feel it needs it.

There's still a tiny bit of texture from the roasted skins and seeds but the immersion blender does such an amazing job of pureeing it down to such a smooth soup there is definitely no need to go any further.


That's 6 family portions and 1 lunch portion right there, heading for the freezer. How awesome is that?

All it needs now is a grilled cheese sandwich on the side and a sprinkle of parmesan. 

And a cozy fire. 

Bring on the cold. I'm ready!

The Attack

Good Morning, Everyone!

As often happens, I had a completely different post planned for today but when I was putting the camera away this morning something caught my eye.....


I spotted this little guy out my living room window....he was planning his attack on the flat feeder to steal the peanuts!

(These photos were all taken through a very clean not so clean window so please excuse the quality!)


He's awfully cute, isn't he? As long as he doesn't come into the house we will get along just fine!


There he goes, up on the back of the chair....


Scurrying up the feeder pole.....boy, he's quick!


Nearly there....


And he's in!! Can you see him?


Back out again, quick as a flash, holding his treasure!


Oh boy, look how lucky he is with a big peanut to munch on for breakfast!


And.....just like that? He's gone!

But he'll be back. The flat feeder gets a fresh supply of peanuts in the shell every morning before I go to work....and every afternoon when I come home it's empty. This is the first time I've been able to get photos of the little bandit - usually as soon as they see movement through the window they take off running! 

I spotted a Blue Jay this morning having his breakfast there, also...but no photos of him just yet, he was far too quick for me. Now that they have found the feeder it will be a busy spot. It will sure be nice to watch the birds and critters out the window in the winter months from my cozy chair next to the warm fire. 

It won't be that long until the first fire is lit....do you see how the leaves are changing in my garden? The heat wave has passed with the rainstorm last night (yayyy!) and the cool weather is moving in - the leaves will change so quickly now and before you know it the trees will be a kaleidoscope of color!

Which means it's time to decorate for fall....double yayyyy!!
