Curried Sweet Potato, Carrot, and Apple Soup

This one came courtesy of some leftover baked sweet potatoes and glazed carrots that needed to be used up. 

And of course, the ever-present quarts of home made chicken broth in my fridge.

Cozying Up For Winter

It's been brutally cold on the mountain top lately....yesterday I'm pretty sure my contact lenses froze to my eyeballs the second I stepped out the door. 

Those of you in warmer states probably don't understand, but we do get used to the frigid winters....and we learn to embrace winter on the mountain top.

Perfect Potato Leek Soup

'Tis the season on the mountain top for snow....and soup. Lots and lots of steaming bowls of soup, to warm a soul from the inside out. 

Recently, my little mountain top market had some gorgeous leeks on sale, which I snatched up in a hurry, intent on making one of my all time favorite soups....Potato Leek.

Meatloaf, Mastered

I have always loved a good meatloaf. Growing up, it was one of the meals my mom made so well, and I loved when it was on the menu. 

Pork chops? Not so much. Dad liked them very well done, and it was like trying to chew the sole off the bottom of my shoe. 

But meatloaf? That was a treat!

I do....I planned the whole week's worth of menus last weekend so I could do my grocery shopping early! 

Look at me being ahead of the game....and I only forgot one thing! Good thing my younger daughter passes the market on her way home!

Chicken Taco Soup

I can't believe how long it's been since I've shared a recipe with you!! It's not like I haven't been cooking, I certainly have....some amazing meals have come out of this little kitchen this winter!

Well, fortunately I decided to take photos the other night when I made this amazing Chicken Taco Soup because it is most definitely a KEEPER and will be on repeat in this house!

And for any of you on Weight Watchers, this is an incredibly low point soup....as a matter of fact, with the rice it's only two points, but if you leave out the rice it's one point....without the toppings, of course.
