Recipe Roundup - Top 16 from 16

Yeah, I know. I should have posted this last week. What can I say, I'm a busy lady! :)

The Best Veggie Lasagna Ever!

Hi Everyone - 

It's nearly the weekend - woo hoo!!!  Happy Dance!!

I have an amazing recipe for you to try this weekend that will help you preserve all those beautiful veggies you're getting out of the garden right now to enjoy in the winter months ahead. 

This is seriously the best veggie lasagna ever in the history of veggie lasagnas!!  Even people who don't like veggies....or lasagna....or veggie lasagna....LOVE this dish! I have been making it for a few years now and I always make enough to freeze a couple for future meals. This is a huge hit at my dinner parties! Like, ginormous incredibly gigantic amazingly HUGE!

I'm not gonna lie, there are a lot of photos here and this post is going to be kind of long. That's why it took me a month to get it to you. Sorry about that....

So grab a cup of coffee or a glass of wine and settle in. And then put this on your to-do list for the weekend - you'll be glad you did!

Here we go....

Start by gathering up your veggies. I have mixed it up in the past, depending on what I had at hand. This is what went into this batch:


Oh, and there were mushrooms also. They didn't make the photos. Mushrooms are camera shy, you know. 

There are a number of ways you can cook the veggies for the lasagna layers. I have roasted them in the past which I think is the easiest way as you can cook them all in one big batch. However, if it's summer and too hot for turning on the oven you may want to grill them. I've done that, too, and it turns out well but you need to stand over the grill for about an hour. You can also saute them, which is what I did this time. Because my oven wasn't working. Yikes. So I sauteed them in batches while I was making the garlic Bechamel Sauce. 


While the veggies are cooking in a little olive oil, start making your sauce by melting a stick of salted butter in the bottom of a large sauce pan. 

When it's all melted, throw in your garlic, which you have peeled and chopped. I used 10 cloves for this triple batch lasagna. 

When the garlic is nice and golden brown, whisk in a half cup of all purpose flour, a little at a time, to create the roux. 


It will all come together nicely into sort of a paste. Keep whisking it and cooking over low heat for a few minutes to cook the flour taste out of it. 

Then add milk in slowly, whisking it into the roux. I use organic fat free milk, which works well. I probably used close to a half gallon for this triple recipe. 


Keep your whisk close by - you will need to keep stirring this frequently so it doesn't burn to the bottom of the pot. Heat it on low and eventually it will start to thicken as it heats. After it boils, keep stirring for a few minutes and let it simmer - you will end up with this beautiful creamy white sauce. 


Gorgeous, right? I add some freshly ground pepper and sea salt at this point. More pepper than salt, it doesn't need much salt. 


Keep cooking the veggies in batches until you get through them all. Yes, it takes a while, which is why this is a weekend recipe and definitely not a weeknight-after-work recipe. It's worth it. Trust me on this. 


I cook the tomatoes last. When they have broken down and released their liquid they turn into a beautiful rustic tomato sauce. 


Isn't it just lovely??

Ok, gather the rest of your ingredients. And yes, I will include a recipe at the end. 


You will need lasagna noodles (#captainobvious) - I use the Barilla oven ready lasagna noodles and I love them - you don't have to mess with boiling them first and then handling soggy hot noodles. Easy peasy. 

Some shredded mozzarella. Looks like I used one bag per lasagna, part skim. 

And some freshly grated parmesan. Lots. 

Time now to gather everything together and start layering!


Yup, a lot of dishes. I hope you have a dishwasher. If you don't, go buy one. Now. 


Start with the tomatoes in the bottom layer. If you're not using tomatoes you could start with some of the Bechamel in the bottom layer. You need a 'wet' layer for the bottom to give the noodles something to cook in. I love tomatoes in my lasagna so that's always my first layer. 

Next, a layer of noodles. Then Bechamel - again, to surround the noodles in moisture. 


I just start layering veggies on top of that, kind of randomly but also keeping in mind what I think tastes good together. I did  peppers and zucchini next. 


Then some bechamel, some mozzarella, and some parmesan. Then more noodles, and more veggie layers. 


I think we end up with three layers of noodles in between layers of veggies, sauce, and cheese. Or maybe two layers. This dish is heavy on the veggies so definitely a little on the healthier side. But not to an extreme - I mean, we do have cheeses and buttery white sauce in there. But using fat free milk and part skim mozzarella helps lighten it up. And you are most definitely getting your veggies!

The top layer is more sauce topped with mozzarella and parmesan. 


In the end you will have these absolutely stunningly amazingly beautiful lasagnas!

At this point I would often bake one for dinner and two would go unbaked in the freezer. But since my oven was not working....all three went into the freezer. 


(By the way, I did find the third lid since then....it somehow got packed into another box that was full of Tupperware that I just recently unpacked. Not sure how that happened, but I'm glad it turned up.) 

So, that's it! These lasagnas will feed probably 6 people each for a small dinner party. This is a fantastic way to preserve the bounty of the summer garden or farmer's market to enjoy on a winter's night.

Recipe: 

Veggie Lasagna with Garlic Béchamel (makes 3 medium sized lasagnas)

For the garlic béchamel sauce:

(I do not use the nutmeg for this recipe. I start with the butter, saute the garlic in the butter, whisk in the flour, then add fat free milk.)
Butter or light butter
10 big cloves garlic, minced
1/2 gallon Fat free milk
1/2 cup Flour

For the veggie layers:
1 patty pan or other yellow summer squash, cut into 1” slices
1 Zucchini, cut into 1" slices
2 small or 1 large eggplant, peeled and cut into 1" slices
2 vidalia onions, cut into 1” slices
3 sweet peppers, cut into 1" slices
Mix of cherry and regular tomatoes, cut up
Pint of mushrooms, trimmed and sliced

Drizzle a little olive oil in a big pan over low-med heat. Sautee the vegetables in batches until soft and fork tender. 

Lasagna noodles (I use the barilla no-bake)
3 bags shredded Mozzarella cheese (I use part skim) 
1 1/2 cups Grated parmesan or romano cheese

To layer:

A layer of tomatoes on the bottom of the dish. Next a layer of noodles. Then Bechamel. Then veggies. More béchamel, then mozzarella and parmesan. More noodles, béchamel, veggies, grated romano or parmesan cheese, noodles, béchamel, mozzarella, grated romano or parm to finish off.  

The amount of layers depend on the size/depth of your baking dish. 

Bake at 375 until golden brown and bubbly. Make sure you make at least one extra for the freezer!! Don’t bake the extra, just layer and wrap. On the day you want to make it, leave it out on the counter before work, come home and pop in the oven. You may need to bake it with foil for part of the time if still really cold or partially frozen, then remove the foil so the top layer can brown.


UPDATE:

When I recently baked one of the previously frozen lasagnas I discovered that the Pattypan Squash skin, while nice and tender when eating it freshly cooked, becomes quite tough when frozen and then recooked. I would suggest if using Pattypan squash that you use only the flesh and discard the skin.

Pumpkin Lasagna - No, Really!!

I know what you're probably thinking....Really? Pumpkin Lasagna? 

I know. If I had seen it on a menu I would have kept on going. Not a chance would I order it. I honestly am NOT a pumpkin person. Does nothing for me. 

And I did not start out my day with any thought in my head of making pumpkin lasagna, that's for sure!

Nevertheless, that's exactly what happened. 

And it was so incredibly fabulous I had to share it with all of you!

It all started because I have all this fall produce that is still around. I cannot waste food . So, although I had no idea what I was going to do with this pumpkin I bought at the farmer's market, I simply knew that someday I would cook it up and give it a go!

Well, that someday was yesterday. It was time. The pumpkin needed to be cooked....even though I had no clue what I would do with it. 

I started with a tip from a dear reader - thanks, Pat! 

Pat suggested when she read my post on My Favorite Butternut Squash Soup that, in the future, I should put the whole butternut squash into the crockpot and cook it that way, no peeling required. 

I figured if it will work for a butternut squash it will work for a pumpkin!

So, in it went while I puttered around doing a bunch of chores. I figured once it was cooked I would figure out what to do with it. 

But while I was puttering around I kept thinking about it. I felt like making some sort of pasta dish and I remembered some pumpkin ravioli I tried many years ago - I recall being very surprised at how much I liked those ravioli!

Now the wheels were turning. I looked online to see if anyone else had the same idea and I saw a few recipes out there. But none were quite what I was looking for, so I did what I normally do in that case - take a little of each recipe, add them to what's whirling around in my head, and create my own concoction. 

And here it is for you. Because it was beyond amazing! This dish absolutely blew me away! 

I confess, I did not write down precise measurements however I did photograph the steps involved as I went on. 

Here is my photographic journey of the creation of my very first Pumpkin Lasagna. 

I can tell you for sure it will not be my last!


I started in the morning by cutting the top of a small pumpkin and putting it in the crockpot with about a half cup of water in the bottom of the crockpot. I did not use any seasonings at this point but just put the lid on and went about my day. 


I put the crockpot on high for the first hour and then set it to low for the next 5 hours. I cooked the pumpkin for 6 hours total. 

When it was time to cook dinner I removed it with tongs to a cutting board and scraped out the seeds. 

I then took a large spoon and scraped the cooked pumpkin flesh away from the skin and discarded the skins. Well - not quite discarded but rather into the compost bucket. 

The pumpkin flesh went into a bowl - I would guess I had about 2 cups pumpkin total. 


I mashed it up with a half stick of butter, some freshly ground sea salt and pepper, and about a 1/4 tsp nutmeg. I then added some chopped flatleaf parsley (1/3 cup) and a handful of sage leaves, which I also chopped. 


I had frozen both the parsley and sage at the end of the gardening season so I have fresh herbs for cooking all winter long. The parsley was chopped prior to freezing but the sage was frozen in whole leaves, which I pulled off the stems prior to freezing. Look how wonderful they still look all these months later!


The beautiful herbed pumpkin puree is ready to go. 

While I was preparing that, I was also sauteeing two sliced onions in a little olive oil. 


When the onions were nicely caramelized I made a hole in the center, dropped in a tablespoon of butter and sauteed a half a head of garlic, minced. 


I added a half bag of spinach once the garlic was fragrant and put the lid on the pan for a few minutes. 


Gorgeous! Wilted fragrant spinach. A sprinkle of freshly ground pepper and salt at this point and this layer was ready. 


I grabbed a glass lasagna pan and got busy layering. In the bottom of the pan I poured about a cup of fat free milk. 

Into the milk went two no-bake lasagna noodles. The milk will give them the layer of moisture they need to cook properly. 


On top of the noodles I sprinkled about  1/4 cup grated Romano cheese, 1/2 cup shredded Mozzarella, and some salt and pepper. 

Two more noodles went on top of this mixture, and the spinach mixture on top of those noodles. 

Two more noodles on top of the spinach layer, and then came the herbed pumpkin layer. 


More noodles on top of that, with a layer of Mozzarella and Romano cheeses. 


Another layer of noodles and then the final layer of Ricotta, Mozzarella, and Romano cheese. 


I poured a little half & half over the top to make sure all the noodles would have enough moisture for cooking, gave it a good sprinkle of freshly ground pepper, and covered it with foil. 

Into a 375 oven for about an hour or so. I took the foil off for the last few minutes and turned the oven to low broil to brown the top - and when I took it out it looked like this:


Isn't that just gorgeous?

I let it 'set' for a good 10 minutes before serving. 

A sprinkle of freshly shaved Parmesan cheese set off the final dish beautifully. 

I think it's fair to say we were all absolutely delighted with my latest experiment!

The creamy cheesy layers complemented the pumpkin herb layer so beautifully!



The sage and nutmeg were just enough to set the dish apart from my usual veggie lasagna but they were subtle enough that they just blended beautifully with all the other flavors. 

The spinach, onion, and garlic layer added enough savory to complement the sweet of the pumpkin. Amazing, seriously!

All in all, I am so incredibly pleased with my experiment and I only regret I didn't make another for the freezer. 

But that's ok....there's another pumpkin that needs to be used before long. 

And I know just what to do with it now!

Easy Peasy Entertaining - Dinner Party

I love to cook, no secret there. And I really love to share my meals with friends and family. 

But I work full time, and we seem to have a very busy social life. 

It can be hard to find the time to host a dinner party with everything else that is going on in life. 


I actually prefer to host midweek, after work. I have to cook dinner anyway so why not have a few friends over to share? Plus I don't get myself all crazy cleaning unnecessary things in the house like I would on the weekend. It is what it is.....and another bonus? I'm already showered, dressed, and have makeup on! When I host on the weekend the last thing I take care of is me....the house looks perfect but I'm answering the door with wet hair and no makeup on. 

So....what are my secrets for hosting a midweek dinner party?

Keep It Simple, Stupid!

That's what I tell myself. 

And sometimes I even listen to my own advice!!

Tonight I am hosting dinner for 6. The menu? 

Simple. 

Cheese Board and Cocktails to start. Easy. 

Salad with mixed greens, cranberries, sliced apple, red onion, goat cheese, and pistachios - dressed very simply with olive oil, blackberry ginger balsamic vinegar, salt, and pepper. 

The Very Best Veggie Lasagna Ever. Remember when I told you about that? And I made a few for the freezer? Yup, that was for dinner parties. I pulled a large one out of the freezer on Sunday and put it in the fridge to thaw. I'll cover it with foil and pop it into the oven when I get home from work. 

And some lovely soft squishy Snowflake Rolls I picked up at the market last night. Yummmmmm!!

Dessert? Haagen-Dazs Ice Cream with Sliced Strawberries. 

Easy peasy, right?

To make things even easier on myself when I get home tonight I did the prep work before I left for work. 


The cheese board is out on the counter with the knives and crackers I need....the grapes are washed and ready....I left out the mixed nuts along with a bowl....and covered the whole thing with a tea towel. 


The big wooden salad bowl and salad servers are out on the prep island along with the dried cranberries, an apple, the pistachio nuts, the olive oil, and the blackberry-ginger balsamic. I forgot the red onion...drat. I hope I don't forget to add the onion to the salad!


The bread basket has a clean napkin liner ready to go, the rolls are left out where I won't forget them, and the foil is right next to them so I remember to wrap them and pop them into the oven when I take out the lasagna. 


I even lined the baking pan in foil already - the lasagna will be put on top of here and popped into the oven - the foil makes cleanup of any bubbling over super simple. 


I trimmed the wicks of all the candles and refilled the dining room table candles that had burnt out. I even left out the candle lighter. 


I took the clean plates and silverware right from the dishwasher this morning and set the table first thing. Kill two birds and all that!

When I get home from work, I will do the following:

1. Cover the lasagna with foil and pop it into a 350 degree oven
2. Run around with the vacuum quickly
3. Put on a good Pandora station that suits my dinner guests tonight 
4. Light the candles 
5. Make sure the lighting is just right for entertaining - not too bright, not too dim
6. Wrap the rolls in foil and leave out some butter to soften
7. Make the salad - I won't dress it until the last minute before serving, however 
8. Make myself a cocktail 
9. Freshen my makeup and hair
10. Play hostess

Done.

I can't believe I've been blogging for just about 6 months now! And I've 'met' so many amazing new friends - what an incredible bonus that has been!

I know many of you have just recently found my blog and I am so happy you did! I truly cherish each and every one of your comments and I feel so incredibly blessed to have so many folks following my little blog. 

I have created a Facebook page for my blog which is interesting because I am NOT a Facebook person in the least! However, it's a great place for me to share some of the various articles that I find interesting as well as some recipes, cooking and house tips, and incredible houses.
