A New Addition to Mountain Mama's Kitchen

I hope all my sweet readers had a wonderful Christmas!

It was a busy, busy time in my little mountain top house, but filled with much love and laughter as well. 

Not to mention, lots of wonderful gifts! I'll share more of them after I unpack and photograph them, but for now I'm sharing something new in Mountain Mama's kitchen....an Instant Pot. 

Sweetie surprised me with this one, and I'm so excited to try it out!

I've been doing a little research online, and I have lots and lots of recipes already pinned to my new Pinterest Board - wow, where have I been, apparently the Instant Pot is all the rage in foodie land!

To narrow it down, here are the first 5 recipes I'm going to attempt with this new gadget of mine:

Instant Pot Roasted Potatoes
I'm a big fan of potatoes in any way, shape, or form. Roasted potatoes are one of my favorite ways to eat potatoes, but I rarely make them because of the two step process required for a traditional roasted potato. However, this recipe from Amy + Jacky does everything right in my new Instant Pot and quickly! That means roasted potatoes can be on the menu any day of the week, not just for holidays meals!

Smoked Sausage & White Bean Vegetable Soup

I love a good sausage and bean soup, and this one looks absolutely amazing. I like that this recipe uses dried beans....it's not only a warm comforting bowl of goodness but incredibly easy on the budget as well!

5 Ingredient Instant Pot Mac & Cheese
Will you just look at this.....one of my weaknesses is a good mac & cheese and this one from The Food Network has my mouth watering! And with only 5 ingredients this would be a quick and easy meal to whip up after work. I must check my pantry and see if I have a can of evaporated milk.....if I do this might happen in the next day or two!

Instant Pot Orange Chicken
What about this Instant Pot Orange Chicken from Sweet & Savory Meals....how awesome does this look!  I crave Asian takeout food at times, but try not to indulge too often as I know my own meals are so much healthier, not to mention budget friendly. This combines the best of both worlds!  I imagine the aroma in the house while this is cooking would be divine!

Instant Pot Chocolate Lava Cake
Speaking of divine, this recipe for Instant Pot Chocolate Lava Cake from Favorite Family Recipes looks absolutely heavenly! Sweetie and I are both big fans of lava cake and will often share one if we are out for a special meal....we usually fight over the last bite! He'd be so happy if I could master making these at home....although that could be pretty scary also...uh oh!

Did any of you get an Instant Pot for Christmas? What do you plan on making in it?

If you've had one for a while I'd love to hear your tips and tricks!

  2. Let me know how you like it. I have been wanting an airfryer but havnt gotten one yet. I also have thought about the insta pot. This post is making me want one asap! Ha.

    1. I'll definitely keep you updated, Lisa. I have an airfryer and we use it mostly for chicken wings....I love buffalo wings but hate the fried aspect of them....the air fryer wings are PERFECT and really taste as if they were fried but without all the guilt! I keep meaning to try other things in there, but life gets in the way I guess.

  3. Those Instant pots are all over the place, LOL!! I don't have one as I don't use a pressure cooker, but will be interested to see what you make in yours.

    1. I've never used a pressure cooker either Carole....I remember my mom using one when we were kids to cook whole potatoes. I'm not sure what else she ever made in it, if anything. I'll keep you all updated after I've had it a while! It's also a slow cooker so maybe this means I can replace my crock pot with this...if so the crock pot will go in the pile of kitchen items I'm giving to my daughter when she moves out.

  4. I got mine last year but have only used it a few times because I could not find any good recipes, but I never checked Pinterest for some reason. I will now!

    1. I think once I get the hang of it I'll be able to come up with my own recipes for it, but for now I'm going to stick with recipes I find online! There are cookbooks also, I may pick up one to get me started...

  6. I have some online friends that have an InstantPot and they like them, but I don't have a desire for one. I have no storage space, plus it's just Brian and I at home now. I know that you will get a lot of use out of this and cook a lot of delicious meals!

    1. It's interesting, Melanie, it wasn't on my 'wish list' either - I was quite content with the appliances I already have, but now that I have it I want to make so many things in it! I tried out two recipes already, one for lemon garlic chicken and one for pot roast, and they were amazing!

  8. How fun, Debbie! And here I thought I was the last person on the planet to get one a few weeks ago! I didn't go with the WiFi model. Just the basic model is about as technical as I can bear.

  9. I’ve seen several recipes and YouTube videos from Instant Pot users. It looks intriguing, I have to admit. Then we went to my sister’s over the holiday and she used one to cook her ham. It was supposed to take 30 minutes, but somewhere along the line the Instant Pot began releasing steam before the ham was done, then a reading error of sensing something burning popped up to. Needless to say, after a few attempts the ham got cooked, but overly so, and she was very disappointed that it decided to go bonkers when she really needed it! She says she’s used it a few times without a glitch. It’s past the 30 day return guarantee, so I’m not sure what she’s going to do as of yet. I would definitely want to try that Lava Cake recipe if I had one. Good luck and enjoy your new toy!

  10. I was just wondering if the instant pot is the same thing as the air fryer...but guess not, after reading the comments. I'll Google it now. I have used a pressure cooker all my life! Hope you will post a picture. Those recipes look delicious!

    1. It's not the same, Henny...I have an air fryer and I absolutely love it for making chicken wings. We crave them, they are so good! The instant pot is a slow cooker, pressure cooker, rice maker, yogurt maker, food warmer, you name it. It means I can replace my crock pot and rice maker and put them in the pile for my daughter!

  12. You know me, the kitchen is not my room...but I can't wait to see what you make. The only kitchen goodie I received this year was a new set of glasses! Ha! My sister in law, however, received a Sous Vide from Santa and was having a little trouble, so I sent her a few links from your blog and she said they were enormously helpful. Also, I used your baked tomatoes sauce recipe again for a Christmas ziti and everyone loved it. Thanks for making me look like a champ! Happy New Year!

  13. I was sent one for review. I used it twice and reviewed it positively because I think it would be great for busy families, but I ended up donating mine because it just wasn’t for me. I’ll be interested in reading what you think. Happy New Year!

    1. So far so good, Pattie! I think once I get the hang of it I'll be able to experiment a bit more, but for now I'm sticking with recipes I find. It should come in handy for getting a meal on the table quick after work, even things like pot roast that I would normally only make on the weekend.

  14. What a great gift! I just have a small old fashioned pressure cooker, which I've actually never used. My grandmother used hers all the times. I think an Instant Pot would be much easier.

    1. It's not only a pressure cooker but also a slow cooker, Leigh - I'm curious if I'll be able to replace my crock pot with it. I have to measure one against the other and see if it can make the amount of broth I normally make with my crock pot....if not I may have to hang on to both!
